Healthy Choices

Have you noticed that every major milestone in our lives is marked with food?  We have become a society that lives to eat instead of eats to live!

Mainstream media marketing bombard our senses so much that food has become another drug. During any regular TV program every other commercial is about fast convenient foods. Food that looks good, smells good, and tastes even better.

As a Chef, maybe I should not be complaining but I would be remiss in not pointing out the dangers of overeating.

Not only is over eating unhealthy, but the types of foods that you consume are just as important. Food can unfortunately become a habit that is very hard to kick. Great food is like fine wine, it tastes better when partake with friends, in a relaxed atmosphere not rushed.  We should never over indulge, but enjoy in moderation. The Europeans have done this for years why can’t we?

We can make healthier choices!  Remember; eat like a King in the morning – a Prince at noon and a Pauper at night.

Here’s one of my favorite recipes for lunch

or dinner:

Honey-Ginger Grilled Salmon

1 tsp ground gingerfood wine friends

1 tsp garlic powder

1/3 cup soy sauce

1/3 cup orange juice

1/4 cup honey

green onion (chopped)

11/2 lbs salmon fillet

 

In a large self-closing plastic bag, combine ginger, garlic, soy sauce, orange juice, honey, and green onion; mix well. Place salmon in bag and seal tightly. Turn bag gently to distribute marinade. Refrigerate for 15 to 30 minutes.

Preheat grill or skillet for medium heat and lightly oil.

Remove salmon from marinade and discard remaining marinade. Grill for 12 to 15 minutes per inch of thickness, or until the fish flakes easily with a fork.

Served with grilled vegetables or steamed rice.
